The non-alcoholic beverage market is the fastest growing segment of the functional food industry worldwide. Consistent with beverage consumption trends generally, the demand among consumers of these products is for high-nutrient drinks made from natural, healthy ingredients, free of synthetic preservatives and artificial flavour and color enhancers. Such drinks require specialized knowledge of exotic ingredients, novel processing techniques, and various functional ingredients.

Functional foods are experiencing a fast growth in recent years. Functional foods are foods that have a potentially positive effect on health beyond basic nutrition which promote optimal health and help reduce the risk of disease.   Functional foods are foods given an additional function by adding some new ingredients or more existing ingredient. Functional foods may be "designed to have physiological benefits and reduce the risk of chronic disease. Functional foods can also be consumed as a normal diet.

Track 7: Nutrigenomics

Nutrigenomics is a study of nutritional genomics which helps to identify the effects of food and food constituents on gene expression. This helps in identifying and understanding molecular-level interaction between nutrients and other dietary bioactive with the genome. Nutrigenomics influence the genetic variation on nutrition by correlating gene expression and with nutrient’s absorption, metabolism, elimination or biological effects. Generally nutrigenomics aims to enhance rational means to optimise nutrition with respect to the genotype and its aim is to develop and understand how the whole body responds to a food. The effect of single food and single gene is nutrigenomics.

Track 10: Preservation Techniques

The term Food preservation refers to any one of techniques used to prevent food from spoiling.  Food preservation has become an increasingly important component of the food industry in order to prevent the growth of microorganism as well as slowing the oxidation of fats which cause rancidity. And the other main reason for spoilage is water activity present in the food. Initially the  modes of preservation like salting, drying, canning, pickling, smoking, fermentation and  freezing later on in order to reduce the water content up to 98to 99 percent  in foods dehydration and freeze drying process was introduced.

Food wastage is other major issue faced by the food sector at the stages of production, processing, retailing and consumption. Global food waste amounts between one-third and one-half of all food products. Wastage occurs in all stages of food supply chain. Food waste management is classified into food loss and food waste where food loss is the decrease in quality and quantity of food in the production and distribution segments of food supply chain and food wastage is any removal of food from food supply chain which has spoiled or expired.
